Description Sunrize Blackeye Beans - a soft creamy bean with a pea like flavour. A good source for folic acid, potassium, manganese and protein. They are cholesterol free and an excellent source of insoluble fibre which promotes good bowel health.
The Sunrize Fact-ory In the American South, on New Year's Day , black eyed beans (peas) are traditionally eaten. In some parts of the South they are part of a traditional dish called "Hoppin' John", made of beans cooked with rice, pork and seasonings.It is supposed to bring good luck and also financial enrichment. The beans stand for the coins, while the greens that are served with hoppin' john symbolize paper money.
Usage Popular in American South cooking. Once cooked are great used in dips and pureed into a spread for sandwiches and crackers etc. Ideal for making houmus, adding to soups, casseroles, salads. To cook: Soak overnight in clean cold water. Drain the next morning and replace water to cover beans by 5cm. Fast boil for 10 mins. Reduce the heat and simmer until tender. (Because these beans have a thinner skin, they will cook faster) Drain and save cooking water as this contains B Vitamins and can be used in recipes requiring liquid.

On the Label Originally from Africa, blackeye beans are now more commonly associated with southern American food. They are delicious in all types of stew and inTex-Mex dishes. Directions for use: Soak the beans overnight in cold water. After soaking, replace water and bring to a fast boil in a large pan. Let them cook for 10 minutes and then simmer for approx 30-45 minutes or until soft.At this point they can be frozen in batches with some of the cooking water or used immediately.
